About Me

Hello and Welcome! My name is Albrie. I’m the founder of One Bite, Big Change. And I believe in the power of small steps, and honest education that’s available to everyone.

As a registered nurse, certified personal trainer and nutrition coach, I’ve learned to navigate the healthcare system. But as a type 1 diabetic, kidney and pancreas transplant warrior, legally blind, and an amputee, I’ve learned how to thrive- not with a magic pill, but determination, knowledge and small sustainable choices I’ve made over time. One day, one step, one bite at time.

The truth is, the things I needed to truly care for my body weren’t taught in nursing school. I learned them through lived experience- through inflammation, recovery, setbacks, and rebuilding. I learned that healing isn’t just about prescriptions or procedures. It’s about what you put into your body every single day, how you rest, how you move, and even how you talk to yourself.

And yet, most conversations about health are squeezed into a 10-minute doctors visit.

We deserve better than that.

When you understand what’s happening inside your body, you can make cleaner decisions, ask better questions, and feel more confident advocating for yourself.

That’s why I created One Bite, Big Change. To make that knowledge simple, accessible and empowering in a space that feels supportive instead of overwhelming.

Freedom, Healing & Hope Community Day

Join us August 15th as One Bite, Big Change proudly co hosts this community day alongside Divine Concepts Freedom, a 501 (c)(3) nonprofit. We’ll be bringing the community together to raise awareness and support for mental health, community education, and free support to anyone that needs it.

The event will be at the American Legion Post 347 in Lady Lake, an indoor, space where we’ll have several family friendly interactive activities and games, education sessions, resources available in the community, and fun raffle baskets donated by local businesses.

Come to stay cool, hang out, find resources or just meet some new people, and support a great cause!
